All Sean Rooney’s meat comes from his own abattoir, this allows him to deliver a top-quality product with complete traceability. He processes cattle, lambs and pigs for the commercial, wholesaler and farmer’s own freezer. At Rooney’s, they dry-age all their beef on the bone, using slow traditional methods to produce meat of unsurpassed excellence and taste.
